Lentil & Sausage Soup: Serves 8, Calories per serving 410
Ingredients: 1.5 lb smoked sausage, 3 onions, 2 carrots, 1 tbsp olive oil, 1.5 cups green or brown lentils, 1 (15oz) can fire roasted tomatoes, 6 cups Chicken broth, 2 tbsp dried Thyme, 2 dried Bay Leaves, Salt & Pepper
Instructions: Preheat large pot to medium. Chop onions, carrots and sausage into ½ inch cubes. Check through lentils for stones and remove any you find. Cook soup. Add olive oil to pot with onions and carrots. Cook, stirring frequently for 8 minutes until veggies and lightly browned. Add sausage to the pot and cook, stirring frequently, for 6 minutes until sausage is lightly browned. Add lentils to the pot and cook for 3 minutes stirring regularly. Add remaining ingredients and bring to a boil. Reduce heat to a simmer and cook for 40 – 50 minutes until lentils are soft. Remove bay leaves. (optional step for creamier soup. Remove 1-2 cups of the soup and puree in a blender until smooth. Stir pureed soup back into main pot.) Serve. Scoop soup into individual bowls and serve warm
