Cookin’ Louisiane – Pimento Cheese Cornbread

Jay Ducote puts a delicious twist on a southern classic. 

INGREDIENTS 

  • ¾ cups cornmeal
  • ¼ cup all purpose flour
  • ⅛ cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 Tbsp butter, melted
  • 1 cup buttermilk
  • 1 egg
  • 1 cup Jay D’s Pimento Cheese

DIRECTIONS

  1. Preheat oven to 350℉.
  2. Place cast iron skillet in the oven while it preheats until you’re ready to pour in batter.
  3. Combine dry ingredients.
  4. Add all wet ingredients plus pimento cheese. Mix until combined.
  5. Butter skillet & pour in batter. Bake 30 min or until golden brown and pulling away from the skillet.
