GONZALES, La. (BRPROUD) – According to Lamendola’s Supermarket, “science said that it couldn’t be done” – a jambalaya king cake.

Yes, you read that right. A king cake made with jambalaya filling.

Daphne Lamendola, store’s owner, created the new flavor because she wants to be unique. She said everyone makes boudin king cakes.

“I always like to stand out from the crowd, so I said, ‘I am going to make a jambalaya king cake instead.’ So, the next day my team and I brainstormed and started to create magic,” she said.

Lamendola says the king cake takes five hours to make and has been through a lot of trial and error.

“Jambalaya king cake is fresh baked french bread dough wrapped around our homemade jambalaya then topped with fried Lamendola’s homemade sausage, our special spicy mix and green onions,” she said. “Everything has to be made fresh that day and then baked.”

Lamendola’s has been in business since 1936 and is going on four generations of owners. Its only location is in Gonzales.

“I plan to always push the boundaries in all areas of the store,” Lamendola said. “I always say that I am the little store that could.”
