V-Well Solutions: Seared chicken with pesto

2 cups fresh basil
2 tablespoons fresh parsley
¼ cup pine nuts
3 cloves garlic
½ cup olive oil
1lbs chicken breast or thighs
Salt & pepper, to taste
1 tbsp olive oil
3-6 tablespoons pesto

Make pesto.
Toast pine nuts in small skillet for about 1 -2 minutes until aromatic.
Add all ingredients to a blender and puree until smooth adding water as needed.

Preheat & prep.
Preheat a large pan to medium.
Salt and pepper chicken.
Cook chicken.
Add olive oil to the pan and then add chicken.
Cook for 3-5 minutes on each side until cooked through.
Remove chicken from pan and allow to rest for 5 minutes.

Slice chicken into strips and serve on 4 plates.
Top with pesto and serve.
