BATON ROUGE, La. (BRPROUD) – Wednesday, August 3 marks the day when the nation pauses to celebrate the watermelon.

According to one source, on average, Americans eat 17 pounds of watermelon annually.

Though the fruit is believed to have originated in Africa, the country that now both produces and consumes the most watermelon in the world is China.

On National Watermelon Day, an observer can celebrate by enjoying the refreshing fruit on its own or trying their hand at a recipe that makes use of watermelon.

One such recipe that’s fairly simple to whip up is a Watermelon Feta Salad, which can be enjoyed with grilled chicken, grilled steak, or another protein.

INGREDIENTS

1/4 c. extra-virgin olive oil

2 tbsp. red wine vinegar

1/2 tsp. kosher salt

3 c. cubed seedless watermelon

1 c. medium cucumber, chopped

1 c. crumbled feta

1/2 c. red onion, thinly sliced

1/2 c. coarsely chopped mint, plus more for garnish

Flaky sea salt, for garnish (optional)

DIRECTIONS

  1. In a small bowl, whisk oil, vinegar, and salt to create a dressing. 
  2. In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint.
  3. Add dressing and toss to coat.
  4. Garnish with more mint and flaky sea salt if desired.
