V-Well Solutions: Mushroom and Garlic Omelet

Mushrooms & garlic are a match made in have and they shine in this delicious omelet. Quick and simple to make, this breakfast will transform your weekday mornings!

What you need: 2 eggs 1 tablespoon butter ½ cup mushrooms 2 garlic cloves 6 chives (or 1 scallion) 2 thyme sprigs salt & pepper, to taste

Preheat and Prep: Preheat a large pan to medium. Crack eggs into bowl with salt & pepper, to taste and beat with a fork until well mixed. Clean mushrooms with a paper towel removing any dirt and mince. Mince garlic and chives (or scallion). Strip leaves from thyme sprigs and mince.

Cook omelet: Melt butter in pan and then add mushrooms. Sauté stirring frequently for 8 minutes until lightly color ed.

Add garlic, chives and thyme and sauté for 30 seconds. Add eggs and allow to cook for 1 minute untouched to set the bott om of the omelet. Carefully fold one half of the omelet over the oth er and continue to cook for 1 more minute until just cooked thr ough but not dry. Remove and serve.
